Ingredients

Wholemeal yoghurt dough

  • 2 cups (225 g) self-raising flour

  • 1 cup (approximately 120 g) wholemeal self-raising flour

  • 1½ cups (375 g) plain Greek yoghurt

  • Extra flour for dusting

Cheesy Vegemite & spinach filling

  • 1–1½ tbsp (20–30 g) Vegemite

  • 1 cup (30 g) baby spinach, finely chopped

  • 1 cup (100 g) grated reduced-fat cheddar cheese

  • ¼ cup (25 g) grated mozzarella

  • ½ tsp garlic powder (optional)

Method

  1. Preheat oven: Preheat oven to 180°C fan-forced and line a baking tray with baking paper.

  2. Prepare the dough: Combine self-raising flour, wholemeal flour and Greek yoghurt in a large mixing bowl. Mix until a rough dough forms.

  3. Knead: Transfer to a lightly floured surface and knead gently for 2–3 minutes until smooth. Add a little extra flour if sticky or yoghurt if too dry.

  4. Roll out: Roll dough into a rectangle approximately 30 x 25 cm and ½ cm thick.

  5. Add Vegemite: Gently warm the Vegemite for a few seconds to make it easier to spread. Spread a thin, even layer over the dough, leaving a small border around the edges.

  6. Add toppings: Sprinkle over chopped spinach, cheddar, mozzarella and garlic powder (if using).

  7. Roll and slice: Starting from the longer edge, carefully roll into a log. Slice into 12–14 even-sized scrolls.

  8. Bake: Arrange cut-side up on the prepared tray and bake for 25–30 minutes, or until golden and cooked through.

  9. Cool and serve: Allow to cool slightly before serving.

Dietitian tips

  • Add extra greens: Finely chopped baby spinach works well, but grated zucchini (with excess moisture squeezed out) is another great addition.

  • Boost fibre: The wholemeal flour adds fibre compared with traditional white flour scrolls.

  • Adjust the Vegemite: Start with 1 tablespoon and add more to taste, as Vegemite is relatively high in sodium.

  • Get kids involved: Let little ones sprinkle the spinach and cheese over the dough before rolling.
