Ingredients
For the pizza dough
1 cup (150g) self-raising flour
1 cup (150g) wholemeal self-raising flour
1 cup (250 g) plain Greek yoghurt
Extra flour for dusting
For the pizza sauce
½ cup (125 g) no-added-salt passata or tomato puree
1 tsp dried oregano
½ tsp garlic powder
Black pepper, to taste
Topping ideas (mix and match)
1 cup (100 g) grated reduced fat mozzarella cheese
½ red capsicum, diced
½ small red onion, finely diced
½ cup (50 g) mushrooms, sliced
¼ cup (40 g) sliced black or green olives
1 small zucchini, sliced
1 handful baby spinach, chopped
100 g cooked shredded chicken
Directions
Preheat the oven: Preheat to 220°C (200°C fan-forced). Line two baking trays with baking paper.
Make the dough: Add the self-raising flour and Greek yoghurt to a large mixing bowl. Mix until a dough forms.
Knead: Transfer to a lightly floured surface and knead for 2–3 minutes until smooth. Add a little extra flour if the dough is too sticky.
Divide and shape: Divide the dough into 4–6 equal portions. Roll each portion into a small round pizza base, approximately 12–15 cm in diameter.
Prepare the sauce: Mix the passata, oregano, garlic powder and black pepper in a small bowl.
Set up the toppings: Place the pizza sauce, cheese and prepared toppings into separate bowls so everyone can create their own pizza.
Assemble: Spread a thin layer of tomato sauce over each base, sprinkle with mozzarella and add your favourite toppings.
Bake: Place the mini pizzas onto the prepared trays and bake for 12–15 minutes, or until the bases are cooked through and the cheese is golden and melted.
Serve: Allow to cool slightly before serving.
Dietitian tips
Get the kids involved: Let little ones spread their own sauce, sprinkle cheese and choose their toppings.
Add more colour: Offer a variety of vegetables, including cherry tomatoes, sundried tomatoes, zucchini, spinach, capsicum, mushrooms, pumpkin, or eggplant.
Boost the fibre: Swap half the self-raising flour for wholemeal self-raising flour.
Make it budget-friendly: Use leftover roast chicken, vegetables, canned pineapple or whatever needs using up in the fridge.
Cater for different preferences: Keep toppings separate so everyone can customise their pizza. You can also offer dairy-free cheese or gluten-free pizza bases where needed.
